Use Purpose:
1. In food, it is used as a leavening agent, stabilizer, coagulant, nutritional fortifier, preservative, etc. For example, in pasta, pastries, and other foods, it makes dough expand, improves food taste and texture, acting as a leavening agent. In soy products (such as tofu), it acts as a coagulant, helping protein condense and form. It can also be used in canned goods, fruit juices, and other foods to stabilize the system structure. As a calcium source supplement, it is added to beverages, dairy products, and health products to enhance the nutritional value of food and prevent calcium deficiency-related diseases (such as osteoporosis). As a preservative, its aqueous solution is weakly acidic, which can inhibit the growth of some microorganisms and extend the shelf life of food (e.g., used in pickled products, preserved vegetables, etc.).
2. In the pharmaceutical field, it can be used as a calcium supplement to treat diseases caused by calcium deficiency, especially suitable for people who need calcium supplementation (such as the elderly, pregnant women, and children). It has good water solubility, less gastrointestinal irritation, and is more easily absorbed than calcium carbonate.
